Sweet Potato Crust Quiche

Ingredients:1 large Sweet potato

2 tsp Avocado oil

2 cups Spinach

2 cups Kale

1/2 cup Unsweetened Almond Milk

2 Eggs

1/4 tsp Black Pepper

1/4 tsp Salt

1/4 tsp Crushed red pepper

1 cup Mozzarella or feta cheese

Instructions:(Makes 2 Quiche)

1) Preheat oven to 350 F

2) Grease pie pan with avocado oil

3) Thinly slice sweet potato and evenly lay on bottom of pie pan, covering the bottom & sides 4) Brush a little more olive oil on top of sweet potatoes, bake for 20 minutes, then take out of oven

5) Sautee spinach and kale in a pan for 3-4 minutes to cook it down, then place on top of sweet potato crust

6) Mix together the milk, eggs, and seasonings then pour mixture into pie pan on top of the spinach & kale

7) Top with cheese of choice

8) Bake for 35-40 minutes

9) Slice and Enjoy!
